Ingredients for 4 people:
5.29 OZ (150 g) Giannetti Artisans Italian Chestnut Flour from Garfagnana
3.52 OZ (100 g) of Corn Flour (or “polenta”)
1.41 OZ (40 g) of Rice Flour – used to reduce pasta dough stickiness
1 tablespoon Giannetti Artisans IGP Extra Virgin Olive Oil
2 medium-sized eggs
2 tablespoons of water
Chestnut Pasta Recipe Preparation:
- Combine previously sifted chestnut flour with corn flour in a large bowl and swiftly mix them together.
- Incorporate a tablespoon of olive oil, eggs, and water into the mixture. Blend until a sticky dough forms. To prevent sticking, incorporate rice flour into the dough and knead it thoroughly.
- Once you have a firm dough, divide it in half and begin rolling it out. For best results, use a pasta machine. If one is not available, use a rolling pin to flatten the pasta dough by hand. If hand-rolling, it is recommended to place the pasta dough between two sheets of parchment paper. When using a pasta machine, be cautious not to roll the dough too thin to prevent tearing.
The pasta typically cooks in approximately 5 minutes.
