Giannetti Artisans’ Modica Hot Pepper Chocolate is an exceptional niche chocolate from Sicily, holding an IGP Certification from the regional consortium of Modica—making it a protected from counterfeit products of the Italian tradition.
The small Italian town of Modica in Sicily is renowned for its unique chocolate, which is crafted using a method reminiscent of how the Aztecs prepared it during the time of the Spanish conquistadors. We refer to it as “cold” chocolate, as it maintains a grainy and crumbly texture.
Our artisans have preserved its crunchy nature, differing from the conventional smooth chocolate we often know. They have adjusted the recipe slightly by adding brown sugar, enhancing its deliciousness.
One of the secrets of Modica Hot Pepper Chocolate is that it contains very little cocoa butter and no white sugar. Instead, our producer uses granulated brown sugar, which you can see and taste in every bite! Because there is minimal cocoa butter, the chocolate does not melt. A white patina on the chocolate bar is a normal characteristic of this particular processing method, resulting from the cocoa butter resurfacing.
Producing Modica Chocolate involves several steps. Our artisans collect cocoa beans and roast them to bring out their best flavor. They then crush the beans and remove the cocoa butter. Following this, they heat the crushed beans and add granulated sugar, the separated cocoa butter, and any necessary flavorings to complete the paste. Once the paste is ready, it is poured into metallic molds shaped like rectangles with four segments.
